Bifångst is a concept of re-thinking how we source, cook and dine. It is time for us to think of things in a broader perspective. Our end goal is to give you inspiration for the future., a future where we cook in a manner of preserving mother earth and being more efficient with the tools and ingredients given to us.
We strive to see the full potential of an ingredient and cook it using techniques so to use the whole produce and wasting little to none. The idea came from having a pocket restaurant within the restaurant to help minimize the things getting thrown into the bin. A filter so to speak, where things not used up in the main restaurant are given new life by re-thinking their purpose.
Everything else sourced will be either home-grown at the restaurant, foraged or bought by near-by suppliers we have personal relationships with.
By-catch by all means, #nowaste is a philosophy of using everything possible on every produce from fish to meat, to vegetable to fruit.
